Citrus with Fish Bisque on Yellow Cherry Tomatoes and Basil.

IL CONVENTUALE
Our Homemade Ravioli stuffed with Ricotta cheese, Pecorino cheese cream, Anchovies in olive oil and walnut pesto creamed
with Butter and Mint with grated Tuna Bottarga and Chopped Walnuts from the Sorrentine Peninsula (Slow Food Presidium).
The filling has its origins in one of our most successful dishes: the Interrato.

Ravioli homemade pasta with Neapolitan Genovese sauce. A ravioli from our artisan pasta factory filled with the
famous Neapolitan beef and onion Genovese sauce. The Genovese sauce is a condiment made with onions and meat

The Nerano pasta, born in the mid-50s in the homonymous town, according our Style. Our reinterpretation of
one of the typical dishes of the Amalfi coast, Spaghetti alla Nerano revisited with Pecorin/Parmesan cheese,
fried courgettes, basil and flakes of Cacioricotta from Cilento Slow Food Presidium.
