OUR ARTISAN PASTA FACTORY
From the Kitchen to the Table.
We believe in Slow Food cuisine, which is why we always want to bring genuine and unprocessed ingredients to the table.
All the pasta used in our restaurant is handcrafted and homemade, produced in our internal exposed artisan pasta factory, using exclusively durum wheat semolina and 100% Italian flour, bronze drawn, according to our recipes to ensure optimal cooking and the right production of starch during creaming and cooking.
Every day we bake the warm and fragrant Bread of our production, rigorously made with Type 1 flour which retains 80% of fiber and wheat germ compared to 00 flour.
DESSERT OF THE HOUSE
Every day we produce 5 or 6 typical dessert of the Amalfi Coast, all homemade by our Chef Pino, in very limited quantities in order to ensure freshly made desserts.
