Flavors and Ancient Knowledge blend perfectly in
this highly traditional dish. The 'Birbone' is an ancient
pasta shape that we have revived: Fresh pasta with
100% Whole Semolina, Wholemeal Flour, and 100%
Italian Buckwheat Grano Saraceno. Here, we
present it with Anchovy Sauce Colatura (Slow Food
Presidium), Confit cherry tomato, olives and capers,
topped of crushed walnuts and hazelnuts, and crumbled Agerola Biscuit: Two of our most historic dishes
combined in a single, explosive new flavor pairing.

The Nerano pasta born in the mid-50s in the homonymous Location on Amalfi Coast (Nerano), interpreted
in our own way. Our version of one of the typical
dishes of the Coast, our homemade Nerano-style big
Spaghetto with a mix of cheeses, Zucchini in double
consistency, Basil, and flakes of Cacioricotta from
Cilento (a Slow Food Presidium).
