Il Polpo in Doppia Cottura

Twice-Cooked Octopus, Octopus slowly cooked at low temperature in its own oil, then seared, served over lemon-scented potato cream, semi-dried cherry tomatoes, and onion marinated with Blue Curaçao. Slow-cooked, tender, almost buttery. First gently caressed by low heat, then seared to enhance its surface. Resting on a lemon potato cream that evokes the Amalfi Coast, while tomatoes and marinated onion add balance and depth.
